Low Acid and non irritating foods Questions

Since our Gastroenterologist and PCP won't help us,  we might have to go to an ENT to find out how to help soothe his throat (other than laser surgery!).

Foods are weird... they can be acidic on the table but by the time they get digested they aren't (I was just told that).  Complicating this, is when you don't have a stomach which point does this acid change occur?

If your mouth has sores I would think citrus and concentrated tomato/spaghetti sauce would be irritating. 
What about pineapple?

I was told applesauce is acidic.  I thought  apples and peaches are fairly easy to digest. (on babies early foods list) but don't know about the acid level.  Is there a difference if it is fresh, cooked, highly processed or canned?

He mentioned that TGIFriday put pepper in their alfredo sauce.  He is  a hypertaster and never uses pepper!  I told him pepper was good for digestion. I didn't get a response!  Ha!  We all know we can feel the heat from pepper, cayenne and chili's.  There is a digestive component that I'd really like to know more about.  Maybe if I use white pepper he won't notice... maybe I could grow an albino green pepper.  He doesn't like those either! Boo.  I am gonna get sneakier.
